I’m sure I’m not the only mother who struggles with her picky eater and then worry if her little one is getting enough nutrition. Well, it’s a constant battle in my house just like any other to make sure that my child eats healthy.
Luckily my daughter likes eating a variety of fruits however it’s really really hard for me to get her to eat her vegetables, especially when they are whole and/or raw or let’s just say “not squashed”. I know it’s not the ideal form of feeding vegetables but it is THE only way I can feed her ANY and that is by secretly adding lots and lots of them into pretty much any meal I make for her.
I do it by making sure they are completely soft and mixed into any of her favorite food, in this case, it was pasta. I hope to write more recipes about other meals that I make for her which is also full of veggies but she can never tell and gobbles it all up!
The recipe in question here is an extremely easy and quick pasta dinner with meat sauce with a twist!
The ingredients:
– 1 lbs ground turkey/chicken/beef
– 1 pack of frozen spinach or 2 bunches of fresh spinach
– 1 chopped yellow onion
– 2 teaspoon salt
– 1 1/2 teaspoon sugar
– 1 teaspoon garlic paste
– 1 teaspoon ginger paste
– 1/2 teaspoon cumin powder
– 1/2 teaspoon coriander powder
– 1/2 teaspoon garam masala powder
– 1 full jar of a pasta sauce of your choice.
– 1 pack whole wheat pasta
Directions:
– Heat oil in a pan and cook chopped onions until golden.
-Boil and drain the whole wheat pasta separately and put it aside.
– Add garlic and ginger paste to the browned onion and keep stirring.
– Add the ground meat and cook for 10 minutes.
– Once the beef is brown, add the spinach and then cover and cook for 10 more minutes in medium heat.
– Take the lid off and add salt, sugar, coriander powder, cumin powder, garam masala powder.
– Then add the pasta sauce, cover and cook for another 10 minutes.
– Finally add the boiled pasta to the mixture and mix evenly.
– Let it cool down and serve!
